Kimchi Fried Rice Burritos

Ingredients:

For Kimchi Fried Rice:

  • 2 cups cooked jasmine rice (preferably chilled)
  • 1 cup kimchi, chopped
  • 1 cup cooked protein (tofu, chicken, pork, or beef), diced
  • 1 cup mixed vegetables (carrots, peas, corn), thawed if frozen
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon sugar
  • 2 green onions, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon vegetable oil for cooking

For Burrito Assembly:

  • Large flour tortillas
  • Avocado slices
  • Sour cream or Greek yoghurt
  • Fresh cilantro, chopped
  • Sriracha or hot sauce (optional)

Instructions to make Kimchi Fried Rice Burritos:

  1. Prepare Kimchi Fried Rice:
  • In a large skillet or wok, heat vegetable oil over medium-high heat.
  • Add minced garlic and sauté for 1 minute until fragrant.
  • Add the cooked protein and cook until browned.
  • Add chopped kimchi and mixed vegetables, stir-frying for another 2-3 minutes.
  • Push the ingredients to one side of the skillet and add chilled cooked rice. Pour soy sauce, sesame oil, and sugar over the rice. Mix everything and cook for an additional 3-5 minutes until the rice is heated through and has a slightly crispy texture.
  • Stir in chopped green onions, and adjust seasoning if needed.
  1. Assemble Kimchi Fried Rice Burritos:
  • Lay out a large flour tortilla on a flat surface.
  • Spoon a generous portion of kimchi fried rice onto the centre of the tortilla.
  • Add slices of avocado, a dollop of sour cream or Greek yoghurt, and sprinkle with fresh cilantro.
  • Drizzle with Sriracha or hot sauce if you like some heat.

  • Fold the sides of the tortilla inwards, then fold the bottom up and roll tightly to create a burrito.
