  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract

For Serving:

Instructions to make Dalgona Coffee Pancakes:

  1. Prepare the Dalgona Coffee:
    • In a bowl, combine instant coffee, sugar, and hot water.
    • Using a hand mixer or whisk, whip the mixture until it becomes thick and forms soft peaks. This may take about 5-7 minutes.
  2. Make the Pancake Batter:
    • In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
    • In a separate bowl, whisk together the buttermilk, egg, melted butter, and vanilla extract.
    • Pour the wet ingredients into the dry ingredients and gently fold until just combined. Do not overmix; a few lumps are okay.
  3. Cook the Pancakes:
    • Heat a griddle or non-stick skillet over medium heat and lightly grease it with butter or cooking spray.
    • Pour 1/4 cup of batter onto the griddle for each pancake.
    • Cook until bubbles form on the surface, then flip and cook until the other side is golden brown.
  4. Assemble:
    • Stack the pancakes on a plate.
    • Spoon a dollop of the Dalgona coffee on top of each pancake stack.
    • Drizzle with maple syrup and, if desired, top with whipped cream and chocolate shavings.
  5. Serve:
    • Serve the Dalgona Coffee Pancakes immediately while the coffee is still creamy and the pancakes are warm.
