Ingredients:

For Marinating the Chicken:

  • Chicken pieces: 500 grams
  • Yoghurt: 1/2 cup
  • Ginger-garlic paste: 2 tablespoons
  • Red chilli powder: 1 teaspoon
  • Turmeric powder: 1/2 teaspoon
  • Garam masala powder: 1 teaspoon
  • Salt: To taste

For Biryani:

  • Basmati rice: 2 cups
  • Ghee: 4 tablespoons
  • Onion: 2, thinly sliced
  • Tomato: 2, finely chopped
  • Green chillies: 2, slit
  • Mint leaves: 1/4 cup, chopped
  • Coriander leaves: 1/4 cup, chopped
  • Lemon juice: 1 tablespoon
  • Salt: To taste
  • Water: 4 cups
  • Biryani masala powder: 2 teaspoons
  • Saffron strands: A pinch (optional)
  • Hot milk: 2 tablespoons (optional)

Method:

  1. Yoghurt, ginger-garlic paste, red chilli powder, turmeric powder, garam masala powder, and salt should be combined with the chicken pieces in a mixing bowl. For best results, combine all the ingredients and let them marinate for at least an hour.
  2. Drain the basmati rice and rinse it thoroughly under cold running water. Drain the rice after it has soaked for 30 minutes and set it aside.
  3. Warm the ghee in a deep skillet. Sauté the sliced onions until they are golden brown and add them to the pan.
  4. Toss in the chicken that has been marinated, and cook over medium heat until the meat is browned and the marinade has evaporated.
  5. Tomatoes, green chillies, mint, and coriander should be added. Cook for a few minutes, stirring frequently, until the tomatoes are mushy and soft.
  6. After the rice has been soaked and drained, add it to the pan along with the biryani masala powder and the salt. Make sure the rice is evenly coated with the seasonings by gently mixing.
  7. Add water to the pan, cover securely, and simmer on low heat until the rice is done and the chicken is tender about 20 minutes. Cook for about 2 whistles if using a pressure cooker.
  8. Put a pinch of saffron strands in some hot milk and let it steep for a few minutes in a small bowl.
  9. The saffron-flavoured milk can be drizzled atop the cooked rice for aesthetic purposes.
  10. Turn off the stove and give the biryani a break for a few minutes. Fork the rice until it is evenly fluffy.
  11. To add a tangy flavour to the biryani, squeeze fresh lemon juice over it.
  12. Chickpet Chicken Donne Biryani is best served hot, with Raita or a refreshing cucumber-tomato salad on the side. Garnish with fried onions and mint leaves.
